Pistachio Carrots

Ingredients
12 Carrots, peeled and cut into 1“ lengths
4T Butter
1/3C Nuts Over Fish® Pistachio Topping
1 Lemon
Makes 6 Servings
Place carrots pieces in a saucepan, add water to cover, and cook until tender, 25-30 minutes.
Melt butter in a saucepan. Add Nuts Over Fish® Topping and mix. Set aside.
When carrots are done, drain and return to pot. Pour butter mixture over them and cook over low heat for 5 minutes, stirring occasionally.
Transfer to serving dish, squeeze lemon to your taste, and serve immediately.
